Washing vegetables must undergo certain steps to ensure clean dirt, chemicals, but not lose healthy vitamins.
Dr Doan Thi Anh Dao, vice dean of nutrition at Thanh Nhan Hospital (Hanoi), said that in the daily diet, vegetables, fruits and vegetables play a particularly important role. They provide many vitamins, pectin substances and organic acids.
The pre-treatment and processing operations are very important. But some people have depleted the vitamins and fiber in vegetables. At the same time, the health of the eater is also affected.
According to Dr. Dao, we should have certain procedures. First, we have to get rid of damaged, faded, damp parts … With the tools, we have to make sure that they are clean, including water supplies, baskets, pots, even hands. Because when dirty hands touch washed vegetables, they get infected.
To keep vegetables clean, people can rinse them under clean running water or soak them in diluted salt water. Some people often use products recommended in the market to reduce pesticides and harmful chemicals in fruits and vegetables.
This expert advises people to wash vegetables in plain water and then soak them again with diluted salt water. Finally, we rinse with clean water and let dry.
Salt has antiseptic properties, helping to remove dirty parts from vegetables. However, soaking in water will penetrate the vegetables. Soaking too long will increase the chlorination of the leaves.
“In a water bath of about 10 liters, you only need to add about 5 grams of salt to soak for about 5 to 10 minutes. Then you rinse it off with plain water to minimize the amount of salt in the vegetables. This helps ensure that vegetables and fruits are not absorbed with too high a salt concentration, ”Dr Dao said.
At the same time, we should only soak in salt with ready-made products and not be left in place for too long.
According to Dr. Dao, many people soak vegetables in very emotional salt water, follow the habit… As a general rule, take a handful of salt for a small pot of water and soak the vegetables. They often think that as concentrated as possible, then take out the vegetables or cook them.
This is a mistake that many people make, inadvertently causing more salt in the body – the cause of many non-infectious diseases such as high blood pressure, heart disease.
